• Bang Bang Prawns

    Ingredients

    • 500 grams prawns, peeled
    • 5 tablespoons mayonnaise
    • 2 tablespoons sweet chili sauce
    • 2 teaspoons stevia (can use sugar but best to avoid)
    • 2 tablespoons cornstarch
    • 2 tablespoons olive oil
    • 1 head cabbage, sliced into shreds
    • 1 cup iceberg lettuce, sliced into shreds
    • 1/4 head red cabbage, sliced into shreds
    • 1/2 tablespoon balsamic vinegar
    • 1 teaspoon honey
    • 1/4 cup fresh cilantro, chopped
    • 3 tablespoons fresh chives

    Method

    1. In a bowl, whisk together mayonnaise, sweet chili sauce and stevia. Set aside until ready to use
    2. Toss the prawns in the cornstarch until evenly coated
    3. Heat 1 tablespoon of olive oil in a fry pan over a high heat. Add prawns and cook until they just turn pink or opaque (about 3 minutes)
    4. Transfer prawns to a large bowl and combine with the mayonnaise mixture
    5. In another large bowl, combine cabbages and lettuce. Toss with olive oil, vinegar and honey until well coated. Add cilantro and mix well
    6. Combine prawns with salad mixture. Top with chives and serve
