• Banana Protein Bread

    Ingredients

    • 3 ripe bananas
    • 1 cup almond meal
    • 1/2 cup coconut flour
    • 1/2 cup vanilla protein powder (whey or vegetable)
    • 1/4 cup melted coconut oil (also know as coconut butter)
    • 2 tablespoons honey
    • 3 eggs
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon sea salt
    • 1 teaspoon baking soda

    * for a bit more sweetness you can add an extra tablespoon of honey if desired

    Method

    • Pre-heat oven to 200 degrees C
    • Mash bananas and combine with eggs, vanilla, honey and coconut oil (for finer bread you can use a food processor)
    • Add in almond flour, salt and baking soda and mix or pulse a few times
    • Pour the batter into a greased rectangular baking pan
    • Bake for 50 – 60 minutes

    * allow to cool for 15 – 20 minutes before serving
