    Before even attempting this recipe it is important to note that you have to ensure you are using very over ripe bananas. They should be very brown and not suitable for eating straight from the skin. As this is a sugar free recipe you need to gain the sweetness from the banana and over ripe ones will give you the sweetness needed for this dish.

    Ingredients for crust

    • 1 cup almond meal
    • 1/2 cup pecans, roughly chopped
    • pinch of sea salt
    • 1/4 cup coconut butter, melted
    • 2 tablespoons honey
    • 1 teaspoon vanilla essence

    Ingredients for filling

    • 1 can coconut milk
    • 2 large egg yolks
    • 1 teaspoon vanilla essence
    • 2 tablespoons coconut butter
    • 3 VERY ripe bananas
    • 1/2 teaspoon cinnamon

    Method

    1. Pre heat oven to 180 degrees Celsius
    2. Chop 1/2 a cup of pecans or pulse them in a food processor. Alternatively you can buy crushed ones
    3. Add pecans, almond meal and salt into a bowl. combine with coconut butter, vanilla essence and honey. Stir wet and dry ingredients together until well combined. The mixture should be slightly sticky yet manageable
    4. Using your finger, press the crust into a round 9 inch pie tin. Try to get the mixture spread as evenly as possible. You can wet your hands slightly if the mixture becomes tacky
    5. Bake for 12-14 minutes until the crust is golden brown. Remove from oven and allow to cool while you prepare the filling
    6. In a large pot over a low-medium heat, whisk together the coconut milk, egg yolks and vanilla essence. Ensure the heat remains low enough that you don’t start to cook the eggs
    7. Stir constantly until the mixture starts to thicken. Once thickened, remove from heat. This is your custard base
    8. In another pot or fry pan heat the coconut butter over a medium heat. Add the bananas (slightly mashed) along with the cinnamon. Cook until the banana is slightly caramelized and brown
    9. Transfer the cooked banana mixture and the custard base into a blender or food processor and blend until smooth and creamy.
    10. Pour the mixture into your cooled pie crust and decorate with sliced banana. You can also add whipped coconut cream to the top if desired
