• Banana Cream Pie Bars

    Ingredients – for crust

    • 1 and 1/2 cups almond meal
    • 1/4 cup honey
    • 2 tablespoons peanut butter
    • 1 teaspoon vanilla extract
    • 1 tablespoon maple syrup
    • pinch of sea salt

    Ingredients – for topping

    • 1 can coconut cream (refrigerated overnight to separate cream from milk)
    • 1 ripe banana, mashed
    • 1 teaspoon vanilla extract
    • 1 tablespoon maple syrup
    • additional banana slices for topping


    1. In a large bowl, using an electric mixer, combine all of the ingredients for the crust until a crumbly texture forms
    2. Line a square pan with non stick paper and evenly spread the mixture into the bottom of it
    3. Scrape the coconut cream from the top of the can and discard the milk
    4. Transfer cream to another bowl along with banana, maple syrup and vanilla extract. Combine using an electric mixer until the cream starts to thicken
    5. Spread topping evenly over the crust. Top with additional slices of banana
    6. Place in freezer for 1 hour before removing and cutting into slices
    7. Refrigerate any left over portions
