• Banana Chia Bread

    Banana-Nut-Bread

    Ingredients

    • 4 very ripe medium sized bananas (almost brown is best)
    • 4 eggs
    • 1/2 cup almond butter
    • 4 tablespoons butter (not margarine), melted
    • 1/2 cup coconut flour
    • 1 tablespoon cinnamon
    • 1 tablespoon chia seeds
    • 1 teaspoon baking powder
    • 1teaspoon baking soda
    • 1 teaspoon vanilla essence
    • pinch of sea salt

    Method

    1. Pre heat oven to 170 degrees Celsius
    2. Combine banana, eggs, almond butter, butter and chia seeds in a blender or mixing bowl. Combine well
    3. Add coconut flour, cinnamon, baking powder, baking soda, vanilla and salt. Mix well
    4. Grease a 9 x 5 inch baking pan, pour in batter and spread evenly
    5. Bake for 55 – 60 minutes or until a skewer comes out clean
    6. Allow to cool fully before slicing
