• Banana Bread Muffins

    This recipe will make about 12 muffins

    Ingredients

    • 3 cups almond meal
    • 4 tablespoons ground flaxseed
    • 2 teaspoons cinnamon powder
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • pinch of nutmeg
    • 4 very ripe bananas, mashed
    • 4 eggs
    • 2 tablespoons honey
    • 2 tablespoons olive oil or coconut butter
    • 1 teaspoon vanilla essence
    • 1/2 cup chopped walnuts, plus extra for topping

    Method

    1. Preheat oven to 180 degrees Celsius
    2. Place muffin cups in tin or grease and set aside as oven warms
    3. In a large bowl, combine almond meal, flaxseed, cinnamon, baking soda, baking powder and nutmeg.
    4. In a separate bowl, add mashed banana, eggs, honey, vanilla essence and olive oil. Mix well
    5. Make a slight well in the dry ingredients and pour in the wet ones. add chopped walnuts and stir until well combined
    6. Fill the baking cups about 3/4 full. Sprinkle with a few chopped walnuts over each muffin
    7. Bake for 20-25 minutes or until a skewer inserted comes out clean
    8. Allow to cool for 5-10 minutes before removing from the tray
