• Baked Garlic Mushroom Chicken

    • 750 grams chicken thighs, skinned and boneless
    • 250 grams button mushrooms, sliced
    • 1 cup chicken broth
    • 2-3 cloves garlic, peeled and crushed
    • 2 tablespoons coconut butter
    • 1/4 teaspoon onion powder
    • 1/4 teaspoon dried sage
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper


    1. Pre heat oven to 190 degrees Celsius
    2. Combine all of the spices and coat the chicken evenly by rubbing the mixture into it
    3. In a fry pan over a high heat, melt 1 tablespoon of coconut butter and sear the chicken on all sides for 2 minutes each side. Remove from heat and set aside
    4. Add the remaining tablespoon of coconut butter to the pan. Saute garlic for a minute or two until fragrant. Add chicken broth and mushrooms. Bring to a simmer for 2-3 minutes and turn off heat
    5. Place chicken into a baking tray and pour mixture over the top. Place in oven and bake for 30-40 minutes or until chicken is no longer pink in the middle
    6. Remove tray from oven and make the sauce by separating the liquid and half of the mushrooms and transfer it to a blender or food processor. Pulse until the sauce has the consistency of gravy
    7. Pour over the chicken and enjoy
