• No Bake Chocolate Mint Patties

    This recipe makes approximately 12 patties. Adjust accordingly for more or less

    Ingredients for mint patties

    • 1 cup almond meal
    • 2 tablespoons coconut butter
    • 1/4 cup honey
    • pinch of salt
    • 1/2 tablespoon peppermint extract or peppermint essence

    Ingredients for raw chocolate topping

    • 2 tablespoons coconut butter
    • 2 tablespoons cocoa powder
    • 2 tablespoons honey


    1. In a microwave, melt all of the coconut butter (4 tablespoons) until it is only just melted but not hot
    2. In a medium bowl, combine almond meal, 1/2 of the coconut butter, salt, honey and peppermint extract. Mix well
    3. Separate mixture into about 12 even sized balls and flatten each out to resemble a patty shape. If mixture gets too soft to work with, place it in the refrigerator for 20 minutes to harden slightly
    4. In another bowl, combine all the ingredients for the chocolate topping and mix well
    5. Evenly drizzle the coating on top of the patties. You may need 2 coats to completely cover them.
    6. Place in the refrigerator to harden or to add another layer of chocolate before consuming
