• Bacon Wrapped Salsa Chicken



    • 4 skinless, boneless chicken breasts
    • 12 slices bacon, fat and rind removed
    • 3 roma tomatoes, diced
    • 2 spring onions, diced
    • 2 cloves garlic, minced
    • zest and juice from 1 lime
    • 2 tablespoons fresh cilantro, finely diced


    1. Preheat oven to 200 degrees Celsius
    2. To make the salsa, combine all ingredients except chicken and bacon in a bowl. Combine well
    3. Slice chicken breasts in half horizontally and fill each evenly with salsa mixture. Close them up when filled
    4. Roll 3 bacon strips around each breast and either tie down or secure in place with toothpicks
    5. Place chicken in a baking tray and cook for 30 – 35 minutes or until chicken is cooked and bacon is crispy
    6. Serve with your favourite side dish
