• Bacon, Egg, Avocado & Tomato Salad

    • 1 ripe avocado, chopped into chunks
    • 2 hard boiled eggs, chopped into chunks
    • 1 medium tomato, chopped into chunks
    • 3-4 pieces of bacon, crumbled
    • juice from 1 lemon wedge
    • salt and pepper to taste


    1. Prepare eggs by hard boiling to your liking
    2. Cook bacon until crispy. Allow to cool and break into pieces
    3. Combine all of the ingredients into a bowl and mix lightly until part of the avocado and egg turns soft and combines with the salad
    4. Can be enjoyed as a main meal or as a tasty side dish
