• Bacon Avocado Omelet



    • 4 slices bacon, fat and rind removed
    • 1 avocado
    • 2 tablespoons red onion, minced
    • 1 tablespoon cilantro
    • 4 eggs
    • 1 spring onion, finely sliced


    1. Cook bacon until crisp
    2. While bacon is cooking, slice avocado in half, remove pit and scoop the flesh into a bowl. Mash it up but not so it’s overly mushy
    3. Add onion and cilantro to avocado. When bacon is cooked, break it up and add to mixture along with eggs. Mix all contents well
    4. Cook in a lightly greased fry pan over a medium – high heat flipping only once
    5. Garnish with spring onion
