• Avocado Chicken Salad

    Chicken avocado

    This one is a fat burning machine!! You can add extras like cherry tomato and sesame seeds if you prefer a ‘fuller’ salad. Best served on a bed of spinach leaves.


    • 2 cooked and shredded chicken breasts
    • 1/2 cups fresh basil leaves, stems removed
    • 1 large avocado, peeled and pit removed
    • 2 tablespoons extra virgin olive oil
    • juice from half a lime
    • salt and pepper to taste (optional)


    1. Place cooked and shredded chicken into a medium sized bowl
    2. In a blender or food processor, add the basil, avocado, olive oil, lime juice and salt and pepper (if using) and blend until smooth
    3. Pour the mixture into the bowl with the chicken and mix well
    4. Serve on a bed of fresh spinach leaves or other leafy greens
