• Avocado BLT Egg Salad

    Awesome side dish, snack or even a main meal. You can even make a very low calorie egg salad sandwich by replacing the bread with a lettuce leaf or half a wholemeal wrap.


    • 1 avocado, peeled and pit removed
    • 6 hard boiled eggs
    • 3/4 cup cherry tomatoes, quartered
    • 4 strips bacon, fat and rind removed
    • 3 spring onions, finely chopped
    • 2 teaspoons garlic powder
    • 1/2 teaspoon sea salt


    1. Make your hard boiled eggs. Once peeled, set aside in refrigerator to cool
    2. While eggs are boiling, cook your bacon until crispy, break into pieces
    3. In a medium bowl, combine avocado, eggs, garlic powder and salt. Combine well with a fork using it to mash all ingredients together
    4. Add bacon, tomatoes and spring onions. Mix well
    5. Taste and add additional salt or garlic if desired
    6. Consume within 1 day or the avocado will brown and the bacon will soften
