• Apricot Chicken

    apricot chicken


    • 600 grams chicken breasts or boneless thighs, cut into chunks
    • 2 onions, sliced
    • 4 ripe apricots, peeled, stone removed and cut in half
    • 1 cup chicken or vegetable stock
    • 2 heaped teaspoons apricot jam
    • Olive oil
    • Black pepper


    1. In a pot or large pan, sauté the onions over a low heat in a small amount of olive oil until softened
    2.  Add chicken pieces and brown all over
    3. Pour in stock and allow to simmer
    4. Blend or mash the fresh apricots into a puree and add to the chicken. continue to simmer until the chicken is cooked
    5. Add the apricot jam and black pepper. Combine well
    6. Taste sauce and adjust accordingly by adding additional jam or pepper depending on your taste
    7. Serve with mashed cauliflower or on a bed of mashed sweet potato
