• Apple And Rhubarb Crumble

    Old time favourite without the traditional waist line issues

    Ingredients for filling

    • 6 stalks dried rhubarb
    • 6 granny smith apples, peeled, cored and sliced thinly
    • 1 tablespoon honey
    • 1 tablespoon lemon juice
    • 1 tablespoon vanilla essence
    • 1 tablespoon water
    • 1 teaspoon cinnamon powder

    Ingredients for topping

    • 2 cups almond meal
    • 1/2 teaspoon salt
    • 1/4 teaspoon baking soda
    • 1/2 cup coconut oil, melted
    • 1/2 cup honey
    • 1 cup chopped walnuts or macadamia nuts
    • 1/2 cup desiccated coconut
    • refrigerated coconut cream to serve (optional)


    1. Preheat oven to 180 degrees Celsius
    2. In a square baking dish, combine all filling ingredients ensuring everything is mixed well. Set aside
    3. In a medium bowl, combine almond meal, salt, baking powder, melted coconut oil and honey. Mix well before adding walnuts or macadamia nuts and desiccated coconut. Combine everything until the mixture resembles a slightly wet crumble or batter
    4. Evenly sprinkle or crumble the topping over the fruit mixture
    5. Bake for 35 for 40 minutes or until top is golden brown and the filling is bubbling. if the top browns too quickly, cover with foil.
    6. Allow to cool for 5 minutes and serve with cooled coconut cream if desired
